Triple Fruit Popsicles

Ingredients: (if you wish you may add your choice of sweetener to any of the purees)


Watermelon

  • 1 cup chopped watermelon
  • 1/2 tsp lime juice

Kiwi

  • 4 kiwis, peeled (should yield about 1 cup kiwi puree)
  • 1 tsp lime juice

Mango

  • 1/2 large mango, peeled and chopped (approx. 1 cup)
  • 1/2 tsp lime juice
  • pinch of salt 


You will need: 1 popsicle mold that holds 6 x 6  8 inch popsicles (makes approx. 4 oz popsicles), and 6 popsicle sticks.


Directions:  Have popsicles molds ready to go before you begin to puree the fruit.


Watermelon

  • Puree watermelon, lime juice and sweetener (optional) in blender until smooth. 
  • Pour about 2 in. of mixture into each of the 6 molds. 
  • Put in freezer until slightly firm (about 1 hr).  

Mango

  • Puree mango, lime juice, salt and sweetener (optional) in blender until smooth. 
  • Pour 2 in. of mango mixture into each of the 6 molds, on top of watermelon. 
  • Insert popsicle sticks into centre, all the way down to the firm watermelon so they stay in place.  
  • Put back in freezer until firm (about 1 hr).  

Kiwi

  • Puree kiwi, lime juice, and sweetener (optional) in blender until smooth.  
  • Pour 2 in. of mixture into each of the 6 molds, right on top of mango.  
  • Put back in freezer until popsicles are completely firm (about 1-2 hrs).


Tip:  To make popsicles easier to remove from mold, dip them in a bowl of warm water for a few seconds. Enjoy!!
