Split Pea and Ham Soup

Easter Ham Leftovers -- thanks to Jay's Mom for the recipe!​

In a soup pot combine:

  • 8 cups water
  • 1 ham bone that will yield 2 cups of ham at the end
  • 2 cups dried split peas
  • 1 onion chopped and sauteed.
  • 2 bay leaves
  • 1/2 tsp savory or thyme
  • 1/2 tsp pepper
  • 1/2 tsp seasoned salt
  • 1/4 tsp cloves​

Directions:

Bring to a boil and simmer until peas are tender - about 1 hour.

Remove meat from ham bone, slice into bite sized pieces and return to soup. Discard bay leaves.

Add and cook until tender:

  • 1/4 cup split peas
  • 1 cup chopped carrots
  • 1 cup chopped celery, including leaves.

Adjust seasoning to taste.
