Moroccan Quinoa Salad

Ingredients:

  • 2 cups cooked quinoa 
  • 2 cups kale finely chopped 
  • 1 cup carrot julienned 
  • 1/2 cup pistachios chopped 
  • 1/2 cup scallions finely sliced 
  • 1/2 cup cilantro finely chopped 
  • 4 Medjool dates pitted & chopped 
  • 3 tablespoons olive oil 
  • Juice of 1 lemon, about 2 tablespoons 
  • 1 tablespoon orange juice 
  • For sweetness, 1 tablespoon apple cider vinegar (optional)
  • Zest of 1 lemon, about 1 tablespoon 
  • 1 teaspoon turmeric powder 
  • 1/2 teaspoon cumin 
  • 1/2 teaspoon coriander 
  • 1/4 teaspoon cayenne pepper 
  • Pinch of cinnamon 
  • Salt & pepper to taste 


Instructions:

  1. In a large bowl, combine all salad ingredients.
  2. Add the dressing ingredients to a mason jar and shake to combine., or use a bowl and whisk together until combined. 
  3. Pour dressing over the salad and toss until everything is evenly coated. 
  4. Allow salad it sit for 15 minutes before serving (this helps the kale soften a bit). 


Enjoy as is or serve with your favorite protein.


To make this salad more of a meal, add chickpeas, grilled chicken, shrimp, or your favourite protein of choice.
