Edamame Soup



  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 2 shallots, finely minced
  • 2 garlic cloves, crushed
  • 2 inch knob of ginger, grated
  • 2 cups shelled edamame
  • 3 cups broth
  • 1 ½ tbsp soy sauce


Cooking Directions:

  • Fry shallots, ginger and garlic in oil until golden.  
  • Add broth, beans and soy sauce.  
  • Simmer, covered, for 20 minutes or until soybeans are cooked.  
  • Puree in your blender.
